Vegetarian food in Jaipur

A vegetarian's guide to Jaipur street food and Rajasthani cooking: pyaaz kachori, dal baati churma, ghewar and lassi, and the old shops known for each.

Some pictures are illustrations. The real places may look a little different.

Rajasthani classics

Dal baati churma is the dish everyone asks about: lentils, hard-baked wheat balls broken into ghee, and a sweet crumble made from the same dough. Gatte ki sabzi, gram-flour dumplings in a yoghurt curry, and ker sangri, a desert dish of wild berries and beans, come close behind. All of it is vegetarian.

Street snacks

Breakfast in Jaipur is a pyaaz kachori, flaky pastry filled with spiced onion and eaten hot with tamarind chutney. Follow it with a thick lassi in a clay cup. Eat where it's busy and the food is fried fresh.

At home with us

Our kitchen is fully vegetarian. We cook family recipes from Rajasthan and across India, and lighter things like sandwiches, pasta and fresh coffee.

What to see

  • Illustration: Pyaaz kachori with chutneys, a kulhad of lassi and ghewar

    Pyaaz kachori

Rawat Mishthan Bhandar on Station Road, Sindhi Camp, is the name everyone in Jaipur knows.
  1. Lassi

Lassiwala at shop 312, MI Road, open since 1944. Several neighbours share the name, so look for the number. Mornings until about 4 PM.

  2. Ghewar

A honeycomb disc of fried batter soaked in syrup. It belongs to Teej and the monsoon, though LMB in Johari Bazaar makes it all year.

  3. Aloo and pudina kachori

Sampat Namkeen Bhandar in Chandpole Bazaar, opposite Darbar School.

  4. Masala Chowk

An open-air food court beside Albert Hall with stalls from across the city. Some serve eggs, so ask if that matters.
